Help for the Optimistically challenged. If a pessimistic attitude makes you worry about everything that can go wrong, try just the oppostie approach. Visualize everything that can go right. Another way to boost your optimism is to create a "success fantasy", in which you imagine yourself succeeding at a task you consider difficult. In your mind's eye, frame a picture of yourself being disappointed but not devastated if things don't go as you had hoped. "I'd rather be an optimist who's occassionally wrong than a pessimist who's always right."

Recipe of the Week |
~~Angel Hair With Shrimp Sesame Sauce~~
Makes: 4 Servings
Ingredients:
8 oz Angel Hair (Capellini) uncooked
1 lb Asparagus, trimmed cut into 1-inch pieces
2 tsp Vegetable oil
5 Garlic cloves, chopped
1 cup Sliced mushrooms
1/4 cup Low-sodium soy sauce
2 tbsp Sesame oil
1 tbsp Brown sugar
3 tbsp Chutney
2 tbsp Toasted sesame seeds
1 bunch Scallions, finely chopped
1/2 cup Vinegar
1 lb Frozen medium shrimp - thawed
Preparation:
Prepare pasta according to package directions; two minutes before
pasta is done, add asparagus pieces. When pasta and asparagus are
done, drain. Place oil, garlic and mushrooms in a 2-quart saucepan.
Saute for 3 to 4 minutes. Add soy sauce, sesame oil, brown sugar,
chutney, toasted sesame seeds, scallions and vinegar. Simmer for 3 to
5 minutes. Add shrimp to the sauce and cook for another 5 to 8
minutes. Toss shrimp and sauce with pasta and asparagus and serve.
Each serving provides: 609 Calories; 35.7 g Protein; 88.7 g
Carbohydrates; 13.1 g Fat; 138 mg Cholesterol; 167 mg Sodium.

"Wiggle Worm"
Materials -
String or Twine

Foam Plastic Egg Carton

Aluminum Foil
-
Toilet Paper Cardboard Tubes

Scotch Tape
-
Paints and Paint Brushes
Directions:
Paint the cardboard tubes with different colors and let them dry. Cut out two sections from the egg carton. Cut a length of string 2 and 1/2 feet long. Link the tubes by threading string through them and tying knots at both ends, then secure it to the tubes. Leave one end of the string long for pulling with. Tape egg carton sections to each end to represent a head and a tail. Scrunch small pieces of foil to make eyes and glue these onto the head section. Pull the worm along and watch it wiggle and roll.
